A classic with a happy twist since it’s completely animal-free, animal-loving and totally delicious!

How to make this in 3 easy steps:
(for 3 servings)
Step 1 – Hydrate the mince
First hydrate the mince by adding it to boiling water with a stock cube/pot (use double the amount of water than there is mince), then instantly reduce the heat to low and let it simmer for 20 minutes.
Step 2 – Boil pasta
Add your pasta to boiling water and boil until the pasta is soft. Then drain and stir in a little olive oil and salt.
Step 3 - Pan fry the mince and sauce
Pan fry the onion, garlic and carrot for about 3 minutes until soft.
Add the rest of the sauce ingredients (except the basil leaves) and add ⅓ cup of water. Let that simmer for 2 minutes.
Add the mince and stir everything well. Put the lid on the pan and simmer for 20-25 minutes until the mince is fully tender.
In the last minute of cooking add in the fresh basil leaves.
Serve your pasta and pour over the delicious bolognese sauce.
Enjoy these fresh or keep some in the fridge for up to 2 days.

For the mince: 120g of Pea Protein Mince (hydrate it first, see step 1) 1 Stock cube/pot Other ingredients: Pasta | For the sauce: 1 Large onion, finely chopped 4 garlic cloves finely chopped 1 tin of tomatoes 1 tablespoon of passata 1 teaspoon of paprika ½ teaspoon of garlic powder ¼ smoked paprika (optional, its spicy) ½ teaspoon of italian herbs mix ½ teaspoon of oregano Salt as preferred Olive oil as needed. A few fresh basic leaves (added right at the end of cooking!) |
