Bolognese

Updated: Jul 26, 2024

A classic with a happy twist since it’s completely animal-free, animal-loving and totally delicious!

How to make this in 3 easy steps:

(for 3 servings)

Step 1 – Hydrate the mince

  • First hydrate the mince by adding it to boiling water with a stock cube/pot (use double the amount of water than there is mince), then instantly reduce the heat to low and let it simmer for 20 minutes.

Step 2 – Boil pasta

  • Add your pasta to boiling water and boil until the pasta is soft. Then drain and stir in a little olive oil and salt.

Step 3 - Pan fry the mince and sauce

  • Pan fry the onion, garlic and carrot for about 3 minutes until soft.

  • Add the rest of the sauce ingredients (except the basil leaves) and add ⅓ cup of water. Let that simmer for 2 minutes.

  • Add the mince and stir everything well. Put the lid on the pan and simmer for 20-25 minutes until the mince is fully tender.

  • In the last minute of cooking add in the fresh basil leaves.

  • Serve your pasta and pour over the delicious bolognese sauce.

Enjoy these fresh or keep some in the fridge for up to 2 days.
